Coriander leaves and seeds are an indispensable and very popular spice in Arabic and Asian cuisine. This isn't just due to its flavor: the antioxidants contained in coriander help preserve food longer, which is particularly beneficial in warmer climates. Because the pungent scent of the fresh leaves repels insects, bouquets of coriander are hung next to fresh meat in oriental bazaars.
Coriander belongs to the Apiaceae family. Under ideal conditions, coriander can reach a height of up to 130 cm. Its roots are reminiscent of parsley. The leaves of coriander have a light green to deep green upper surface. The underside is covered with a waxy layer. The plant's stem is hollow, straight, and green, which can turn reddish-purple during flowering.
During the flowering period between June and July, white to pink flower umbels bloom, which act as a magnet to beneficial insects. Between July and September, these flowers develop into yellow-brown, spherical seeds that contain a lot of essential oil and have a strong aromatic fragrance.
