Botanically, watercress belongs to the Brassicaceae family. This inconspicuous, evergreen, and perennial plant has dark green, fleshy, glossy leaves. Crushed leaves emit a pungent odor, and that's exactly what they taste like: sharp and slightly bitter. The flowering period extends from June to September. Watercress then produces small, white flowers arranged in umbel-like clusters, from which small pods develop. After flowering, the leaves are no longer as juicy, harder, and taste even sharper. It's advisable to wait for new leaves to sprout before harvesting again.
As a plant-based vitamin bomb and thanks to its fresh, tangy flavor, it enriches curd spreads and salad creations. Its tart flavor also comes across well in soups and potato dishes. Due to its diuretic effect, it is often a component of spring cures.
