Its name is probably derived from the Greek word for honeybee, “melitta”: it is a popular forage plant for bees and is considered a permanent bee pasture.
It's not just bees that enjoy adding lemon balm to their diet. Lemon balm, with its slightly lemony flavor, is a first-class spice. Its aroma enhances salads, fruit, jams, jellies, sorbets, and fish dishes.
Melissa officinalis belongs to the mint family (Lamiaceae), which also includes sage, rosemary, and thyme. Perennial lemon balm is a perennial herbaceous plant and can grow freely up to 1.2 meters tall.
The leaves of lemon balm, with their notched edges, are uniform and covered with fine glandular hairs on the underside. The scents released there are said to repel harmful insects. If you brush the leaves or rub them between your fingers, you'll detect a lemon-like scent. Hence its more common name: "lemon balm."
Lemon balm blooms in midsummer. This is when the characteristically delicate, labiate flowers appear between the leaf axils. The flowers are mostly white, but pink, purple, or blue can also be found.
After successful fertilization, seed fruits form: small, egg-shaped, brown nuts.
