The linden tree belongs to the linden family (Tiliaceae). Of the 40 linden species, the large-leaved linden and small-leaved linden are the most common in our latitudes. The large-leaved linden, which can grow up to 40 meters tall, is more impressive than the smaller small-leaved linden, which can grow to 10 meters tall.
The large-leaved lime is the first to bloom, closely followed by the small-leaved lime and the silver lime. The appearance of the three lime species is very similar. All boast an impressive crown, smooth, grayish bark, and attractive, heart-shaped leaves. The heart-shaped leaves are the easiest to identify. Fine hairs sprout on the upper and lower surfaces of the large-leaved lime. The upper and lower surfaces of the small-leaved lime are completely smooth. The silvery underside of the silver lime leaves serves a special purpose: in sunlight, the silver lime turns the silvery underside of its leaves upward. The silvery leaves reflect UV rays, thus protecting the lime from drying out.
The flowers, which hang in umbels, develop into spherical, ribbed fruits. Towards the end of June, the fruits have a soft texture. They can be pickled in brine or vinegar, for example, like capers. When fully ripe, the fruits can be peeled and are suitable as a vegetable snack or as a healthy salad garnish.
